Bacon-Fried Chicken Food Pr0n

I made some home-made fried chicken in a deep enameled cast iron pot.
I could have used my electric deep fryer, but I’m a old-school food masochist.
First, I soaked the chicken overnight in a mixture of salt, pepper, buttermilk,
Garlic-Pepper flavor Tabasco hot sauce and ground sage.
The next day, I drained off the excess buttermilk and coated the pieces in all purpose flour inside a paper bag.
SHAKE ‘N BAKE!!!
Then I fried them in 325-350 degree oil (this time I used a combo of corn oil and bacon grease),
for about 20-25 minutes (turn pieces about halfway thru cooking time).
Important things to remember:
Have an accurate candy/frying thermometer to check the oil temperature.
Have an accurate meat thermometer handy as well to make sure the chicken is fully cooked:
Cook dark meat to 180 degrees F and white meat to 165 degrees F.
Have good ventilation, because you’ll get a good amount of grease and smoke while you are cooking.

Square Bar Revisited – The American-er Dream

The American Dream burger @ Square Bar in Chicago…

just got American-er…
with the addition of Pulled Pork (and a side of sweet potato fries) !

They said it was the first time anyone had ordered it that way!
I think they should name it after us, don’t you?

The VCB American-er Burger !
has a nice ring to it!

For those unfamiliar with this feat of American culinary genious,
The ‘American Dream’ from Square Bar is:

10oz. char-grilled burger
topped with sautéed mushrooms
and smoked applewood bacon
and packed between a pair of
grilled cheese sandwiches

You must be very hungry to eat this sandwich.
It can easily feed a small village.

Mmm…Barrrrbecue! – The Pork Shoppe

Photos from the recently opened PORK SHOPPE

They ran out of brisket at lunch-time. Oh well. Something to go back for.

It was a ‘to-go’ order. Had to get home to watch the NL finally win an All-Star Game.

ribs, pulled pork, fresh-cut fries, jalepeno corn bread, mac ‘n cheese,
with sweet bbq (hints of prune and citrus), tangy carolina (best of the 3), and spicy (almost like chili) sauce.

Roscoe Village Burger Fest 2010 – formerly Belmont Arts & Music Festival

The ‘It Takes a Village’ Burger from The Village Tap.
They ran out of bacon (noooooooooooo!) and chili by the time I got there,
but still a tasty burger with the ample remaining toppings.
Peppercorn and Grilled Onion burger from Select Cut Steakhouse.
Out of all the burgers I tried, this was my favorite.

View of the DOT DOT DOT crowd from the upstairs screened window at
The Good Old Days collectibles shop (really cool, fully-functional antique radios!).
It got a little rainy.

BIG & little's – Fish Tacos, Truffle Fries and MORE!

939 N Orleans, Chicago, IL, 60610

HOURS
Mon – Fri: 11:00 am – 9:00 pm
Sat: 12:00 pm – 9:00 pm

There are two guys cooking in a little tiny space,
making some of the tastiest food you will ever eat.

Fish Tacos are their specialty, but as you can see on the chalkboard menu below,
they have a few other things you might not want to pass up.
The french fries are freshly made, and perfectly prepared.
(no franken-fries here! HOORAY!)
They’re even better if you order the ‘Truffle’ version for $1.50 more.
If you aren’t in the mood for seafood tacos, they make a stellar cheeseburger,
and if like me, you also worship at the altar of all fish battered and fried,
you will not be disappointed by the molten-hot fish and chips
(but give them a minute or three to cool down).
I’m not going to wax poetically about details.
You just need to go and experience the food yourself.
Seriously… GO!
NOW!
Why are you still here?
